RECIPE : Leek & Celeriac Soup


If you like leek and potato soup but want a 0pp version, this one's for you! This delicious soup has the thick, silky texture and gentle, comforting flavour we look for in a good soup, without compromise.
You honestly can't tell it doesn't contain potato.
Best of all, it's extremely simple to make.

You Will Need:(For 4 portions)

1 small-medium Celeriac
3 medium-large Leeks
1 1/2 Low-Salt Chicken/Veg Stock Cubes
Pinch of white Pepper
1 Litre Water
To Serve:
Snipped Chives

Cut off the ugly, gnarly outside of the celeriac.


Chop into chunky pieces.


Slice the leeks.


Pop all the prepared ingredients into a pan along with the stock, white pepper and water. Bring to the boil then allow to simmer for around 30 minutes until the vegetables are soft.
Blitz until really smooth and silky.


Serve with a few snipped chives on the top for a delicious starter or light meal.

More than one bowl is 1pp but if you eat the whole lot it's still only 1pp!

Tried this soup to-day.. I was very skeptical while making it but once I blitzed it I was totally shocked!! It tasted exactly like leek and potato soup! Thank you so much for all your amazing recipes! Everyone I try I love!!

Hi made this and it's lovely but I put in far too much pepper how much would you recommend never used white pepper before
