Even though soup is such a wonderful and filling dish, sometimes it can be a little thick and gluggy and that's what can result in a batch that is boring to eat. To make a successful vegetable soup, the marriage of ingredients is really important. I've come up with a delicious combination of flavours for this one. It's refreshing because of the lemon, a fabulous colour and warm and comforting because of its texture and thickness.
The optional flourish of crispy Parma ham on the top transforms this into
a rather amazing experience.
This soup is 0pp/approx.30kcal per serving but if you add my crispy Parma ham sprinkle as shown, it's 1pp/approx.70kcal per serving.

You Will Need:(For 4 Servings)
1 litre of water
1 large head of Broccoli
6 cloves Garlic
2 White Onions
Juice of 1 Lemon
Fresh herbs of your choice eg.basil/coriander/parsley
1 low-salt Chicken/Vegetable Stock Cube
White Pepper

To Serve (optional)
4 slices Parma ham
or
Chopped Fresh Mint

Just by looking at these beautiful ingredients, you can see they are going to combine well together. I've been careful not to add seasoning such as soy sauce as that would destroy the vibrant green colour of the finished soup. Keep your seasoning 'clean'. That's why I have used white onion too. Don't worry about the amount of garlic in the recipe. Because it's boiled, it takes on a subtle flavour rather than the pungent one you might think.

Pop all the ingredients in a large pan.
Bring to the boil, then simmer for 30 minutes. Blend.
Check the flavours and 'season up' to your personal preference. Never worry about going off at a tangent with a recipe. If you like black pepper, add some...if you want more herbs, throw them in! Play and experiment with recipes. This stops the boredom setting in and helps you to stay on track.

To serve, trim any fat off the Parma ham using scissors. Griddle until super crispy.
Crumble haphazardly on the top for a crunchy, tasty alternative to croutons.

TIP
For a 0pp soup and garnish, simply snip some fresh mint leaves on top.
This also works beautifully as a chilled version in the Summer. Just thin the soup down slightly if serving cold.
