RECIPE : Magical Fruit Strudel


Here's a magic little recipe!
The flavours and textures of this delicate and delicious pastry will whirl you off to an elegant, Viennese patisserie in your mind, but in reality will only cost you 1pp/approx.120kcal for a portion!

It does seem hard to believe, but with a little Slice-of-Slim sorcery, I have managed to make this whole 50cm strudel for 4pp/approx.600kcal!
Nobody would know this is so low fat as it tastes wonderful and has all the right textures; crisp, sugary pastry that 'snaps' on your palate, filled with warm, aromatic, soft, spiced fruits.

This is a good example of the benefits for Weight Watchers members when creating recipes like this....as those of us following the plan don't have to account for the fresh fruit inside, hence the huge discrepency between propoints and calorie values in this recipe.

I also wanted to tell you that I put all my recipes through the Weight Watchers 'Recipe Builder' on their members website, whenever I devise a creation. This is so that I can give you the most accurate propoint calculations I can. It also helps me to play around with my ingredients until I can get the most out of them. This recipe needs accuracy if you want it to be exactly to my calculations, because a few more raisins, or a little extra cinnamon could push it over the edge and up another propoint value....yes, news to me too that cinnamon contains pp's!

This is a lovely, simple recipe and a great one for this time of year when there are so many wonderful, tempting goodies out there. This one really hits the sweet treat spot, whilst helping you to stay on plan over the Festive season.

YOU WILL NEED : (For One 50cm Strudel)
This serves 4-6 people


One 45g sheet filo pastry.
This is 3pp/119kcal
NB: All my calculations were based on this brand. If you use a different brand or size, please adjust accordingly.
I also calculated the pp's using my calculator, as the recipe builder calls this 4pp, but it is definitely 3pp per 45g sheet.

3 Red Apples or 3 Pears
1/2 Teaspoon Cinnamon
Zest of half a Lemon
 2 teaspoons Artificial Granular Sweetener
10g Raisins
1/8 Teaspoon Icing Sugar
10 sprays Frylight Sunflower Oil

Chop the fruit into small cubes-approx 1-2 cms each. You can remove the peel or leave on according to your preference.


Pop into a bowl with the cinnamon, raisins, lemon zest and sweetener.
Cover and microwave on high for 2 minutes.
Tip into a sieve and allow the fruit to drain of any excess liquid. (You can also give it a good blotting with some kitchen roll).
Allow to cool completely.


Working carefully and quickly, line a baking tray with baking parchment.
Lightly mist with Frylight oil.
Open out the sheet of Filo pastry.
Put the cold fruit evenly down the length of the pastry in a line.


Using the baking parchment, gently pull the pastry over the fruit, rolling carefully but confidently, to form the strudel.


It will be translucent and delicate. Try not to over handle at this stage.


Mist lightly with Frylight Oil then put in the oven at 200 degrees centigrade for 15-20 minutes. 


The pastry should be a light golden colour and very crisp.


Lightly dust with sifted icing sugar.


I use this brand as it makes it simple to control the amount you use. (Click HERE for post on Twist and Sprinkle). I use such a miniscule amount, it doesn't even register on my scales, but gives that beautiful 'snow-capped mountain' dusting I love.


Cut into 4 generous or 6 average slices.
(It's still 1pp per slice
if divided into 6)

Serve warm and slide into guilt-free decadence as you enjoy every morsel!
(Eyes closed please!)

TIP


You can pre-cut the pastry into 4, divide the fruit evenly and make individual strudels.


These freeze well once baked.
Just warm gently in a low oven, then dust with icing sugar to serve.
Absolutely delicious with a cup of tea or coffee for 1pp/120kcal each.
