SMASH & GRAB : Tuna Stuffed Peppers


The wonder of nature never ceases to amaze me. I love using the natural shapes of vegetables as 'receptacles' for other foods. These bright, vibrant peppers are a great carrier for various fillings. They lend themselves beautifully to this dish and are wonderfully filling too.
I've used tuna as the stuffing in this recipe, but you could use what ever you like-just adjust the propoints accordingly.
This meal is only 2pp/approx.200kcal and is very quick to prepare.

Scatter salad leaves on the plate as a base and drizzle with a little balsamic vinegar. Cut the peppers into pleasing scoop shapes.


I love these pre-flavoured tins of tuna . At 2pp/80kcal, they are economical on propoints/calories and save the use of additional mayonnaise.


Pop the contents of the tuna tin in a bowl and 'pad' it out using celery, spring onion and any other salad vegetables and seasoning of your choice.


Fill the pepper scoops generously with the tuna stuffing and tuck in!

This is a great, filling lunch if you are trying to save a few propoints/calories for later in the day.
It would also work beautifully as a packed lunch as you could take the peppers and the filling in separate containers and use the peppers as a 'dipping' tool to eat the tuna mixture.
