RECIPE : You Really Can Have Pizza!

                                            

You will need (per portion):

1 Warburtons Square-ish wrap (available in most supermarkets)


Frylight sunflower oil
2 tablespoons passata (Use the thick one in the glass jar-it stores well too)
62g low fat mozzarella (half a 125g ball)
Fresh basil leaves

This first dish is so easy to prepare and a real favourite in our house. Not only do you get the smell, texture and taste of a real pizza but it's only 7 propoints (approx.298 calories). If you have young kids, its a great one to make with them as it is so simple. Teenage kids can happily make this for themselves- and what a great way to show them a healthy way of eating pizza!

 Take a Warburtons Square-ish wrap (4 propoints-but remember this doubles up to 9pp if you eat two!). Spray one side of the wrap with Frylight-I like the sunflower variety best). About 8 sprays (0 propoints/8kcal) should be enough. Place the wrap sprayed-side-down on some baking parchment on a baking tray. Spread about 2 tablespoons of passata (0 propoints) onto the base. I use the back of a spoon to spread it quite roughly, not too thick- and leave a little border around the edge then it will go nice and crispy. 




Cut a half-fat mozzarella into two halves (3 propoints). Drain off the excess fluid then tear small chunks of one half of the cheese and dot them evenly all over the base.(Don't cut it with a knife-it looks more rustic if you tear by hand). If you need to store the other half of the mozzarella, pop it in a small ramekin dish and top with water to stop it drying out, then cover with clingfilm and refrigerate. Tear some fresh basil leaves and scatter over the top. Even at this stage it looks yummy and in the summer I'll show you a fabulous version with uncooked mozzarella.....but right now in the winter we need the hot bubbliness of this one! 


Put in a preheated oven 225 degrees centigrade for 12 minutes. You'll know it's ready when the crust is really golden and the cheese is bubbling and going brown.

If you have a couple of points to spare, this is amazing with 20g thinly sliced chorizo -(the pre-sliced one that looks like salami). 20g is usually around 4 slices (2 propoints, around 80 calories), but do weigh it. Tear the slices of chorizo in half and kind of curve them over so they stick up, don't lie them flat. That way, parts of the edges char and go crispy when cooking. The picture below should explain what I mean. As you can see, I ran out of mozzarella today so I used 40g Weightwatchers grated cheese instead (2pp)...so where we gained points on the chorizo we lost one on the cheese! I love this game!


If you don't have spare propoints but want to make it more filling, slice some mushrooms on the top, or a little red onion or pineapple. Once you've mastered the basics you can customise it into what ever you like best.....just remember to add the extra propoints or calories if you are using ham, prawns, chicken, quorn, olives etc- all fruit and most veg are 0 propoints but check the plan if you're not sure!

So many times when you make something from a recipe, you get disappointed with the result. Not with this one - the square wraps make a great change and the finished product is really so tasty - I could have eaten more. Great stuff!

Evening Janey, had these for dinner tonight, my husband had a ham and mushroom one and a pepperoni one and I had tomato and basil and they were GORGEOUS! So nice to eat pizza and not feel guilty!
