USEFUL STUFF : The Griddle Pan

Alongside my recipes, I have decided to do a mini feature called "Useful stuff" each week on the equipment and kitchen gadgets I use most frequently. My belief is that if you can create delicious, easy, attractive food with as little hassle as possible, then you are much more likely to achieve your goals and live a healthy lifestyle. Having those tools at your fingertips will help you on your journey and makes the food preparation more enjoyable too.

A griddle pan is such a useful piece of kitchen equipment for a healthy style of cooking. I use mine virtually every day. It's non-stick, so you barely need any oil. Its not cheap to buy, (I think this one was around £9 from Tesco) but if you invest in one it will make your cooking life easier I promise! They last a few years too. I hardly ever use the grill in my oven. I find grilling food is frustrating, because you have to watch it like a hawk, you get a hot face and you can guarantee the minute you take your eye off it, the food will burn!
So, unless you are cooking for large numbers of people on a daily basis, I really suggest you invest in one of these if you don't already have one. You will find as you start cooking my recipes, that I use the griddle pan in many of them -not only because the food such as chicken or aubergine looks attractive with char-grilled lines on it, but the flavour is also enhanced.

As I have a vegetarian in my family, I have two of these pans. I keep one for meat or fish, and the other for vegetables or vegetarian foods. Because I have two, it's great if I want to do some char-grilled veggies to go alongside a meat or fish dish and means I can have the two pans at different cooking temperatures or timings if necessary. Over the next few weeks, I'll be sharing some recipe ideas with you where a griddle pan would be useful but don't despair if you don't have one -you can use your grill!

I've been thinking of getting one for a while now. I will definitely put it on my list.
