Every week throughout the Summer, I will be revealing a new flavour of delicious 'icecream', using a frozen banana base to create an array of delicious, low-fat and exciting recipes.

I've now developed the idea even further by introducing a range of
'Slimmerbocker Glories'.
These are large, layered desserts served in tall glasses and are mouth-wateringly fabulous.
This week, my chosen flavour is a
Mint Choc Chip Slimmerbocker Glory.
It's simply made up of layers of crushed meringue, chopped up mini roll and mint choc chip 'icecream'...Very sweet and very chocolatey. I've kept this one true to its theme, as any other fruit or flavouring seemed to detract from the chocolate and mint.
Finally, it's garnished with a sprig of fresh mint.
This dessert is

You Will Need:(Serves 1)
1 batch of frozen banana 'icecream' base using 1 medium or large frozen bananas.

8g plain chocolate
1 meringue nest
1 WeightWatchers mini roll
To Garnish:
Sprig fresh mint
A few mini meringues (optional)

Make a batch of banana 'icecream' base.
Add the hot chocolate with mint powder to the banana base. Mix well in the blender.
Chop the plain chocolate roughly with a knife and stir into the banana mixture.
This is your mint choc chip 'icecream'.

Chop the meringue nest roughly along with the chocolate mini roll and mix together

Prepare 1 glass.
(I don't have any sundae-style dishes, so I just use tall drinking glasses).
Take the mint choc chip 'icecream' out of the freezer and layer up the Slimmerbocker Glory.
Pop some of the meringue and mini roll in the base of the glass. Dollop some of the mint choc chip 'icecream' on top.
Repeat until you have 3 layers, ending with 'icecream'.
Finally, top with a sprig of fresh mint and a few mini meringues (if you have them).
All that's left to do is to choose a funky spoon and dig in.

TIP
You could make 1 portion of mint choc chip 'icecream'for 2pp/approx.175kcal to have in a cornet or small serving dish, without layering with the meringue and mini roll.
