Every week throughout the Summer, I will be revealing a new flavour of delicious 'icecream', using a frozen banana base to create an array of delicious, low-fat and exciting recipes.

I've now developed the idea even further by introducing a range of
'Slimmerbocker Glories'.
These are large, layered desserts served in tall glasses and are mouth-wateringly fabulous.
This week, my chosen flavour is a
Strawberry Cheesecake Slimmerbocker Glory.
If cheesecake is your thing, you'll love this.
It's made up of layers of crushed digestive biscuits, blitzed frozen strawberries, fresh strawberry slices, cheesecake-flavoured 'icecream'...then topped with white chocolate buttons and a big fat strawberry!
It is completely huge, delicious, very filling...and...
This dessert will only set you back 5pp/approx.350kcal per portion!

You Will Need:(Serves 2)
1 batch of frozen banana 'icecream' base using 2 medium or large frozen bananas.
50g Total 0% fat Greek yoghurt
A few drops vanilla essence or paste
2 packets of WeightWatchers digestive biscuits
(each pack contains 2 biscuits)
200g frozen strawberries
1-2 teaspoons granular sweetener
8 fresh strawberries
10g white chocolate buttons
***
Make a batch of banana 'icecream' base.
Add the extra light Philadelphia, yoghurt and vanilla to the banana base. Mix well in the blender. This is your cheesecake 'icecream'.
Pop it into a mixing bowl and store in the freezer while you prepare the other elements of the dessert.
Rinse out the bowl and blade from the food processor, then blitz the frozen strawberries to the 'cous-cous'or granular stage. Add sweetener to your personal taste.

Crush each packet of digestives with the back of a spoon. (Keep them in the packaging-it makes less mess and makes accurate portion distribution much easier).
Slice the fresh strawberries, retaining 2 really gorgeous ones for the final topping.
*
Prepare 2 glasses.
(I don't have any sundae-style dishes, so I just use tall drinking glasses).
Take the banana cheesecake 'icecream' out of the freezer and layer up the Slimmerbocker Glories.
Pop half a portion of the digestives in the base of the glass. Dollop half a portion of the strawberry granules on top.
Distribute half a portion of the
cheesecake 'ice cream' next.
cheesecake 'ice cream' next.
Add a layer of fresh strawberry slices, then repeat again - digestives, blitzed frozen strawberries and cheesecake 'ice-cream'.
Top with the remaining fresh strawberry slices, break up the white chocolate buttons and top with a prize-winning strawberry for a final flourish.
All that's left to do is to choose a funky spoon and dig in.
