This has to be one of the simplest salads you will ever make but is certainly one of the most delicious!
Fresh, cold, julienned strips of cucumber are lightly tossed in sweetened rice vinegar resulting in a refreshing, gentle and crunchy salad.
Perfect with chargrilled meats or fish to cleanse the palate.

There is something about julienning the cucumber that makes this easy to eat in vast quantities- and as this salad is 0pp, I usually allow 1 cucumber per person, but you could make it stretch a little further.
This is my most favourite white vinegar on the planet, but I'm finding it quite hard to source in supermarkets these days. It's a Chinese seasoned rice vinegar. With a little artificial sweetener and some white pepper to taste, it becomes a magical dressing. If you can't get hold of any, use a mild white wine vinegar. You could dilute it slightly with a little water if it tastes too pungent.
You Will Need:(For 2-4 portions)
2 Cucumbers
2 tablespoons Seasoned Rice Vinegar
(Or white wine vinegar)
1 teaspoon Artificial Granular Sweetener
White Pepper to taste

Make the salad just before you need it otherwise it will go soggy.
Literally pop a couple of tablespoons of vinegar with a teaspoon of artificial granular sweetener and white pepper into a serving bowl.
Julienne the cucumber straight in. I leave out the seedy centre of the cucumber and use it in a green salad another day. Using your hand, turn the cucumber so that it has a light drenching of the vinegar all over.
