If you like simple, traditional pancakes but you're looking for a new serving suggestion, this one's for you! My caramelised apples have a twang of lemon with a syrupy sugar coating. Served with a dollop of lemon curd creme fraiche this recipe adds a whole new dimension to pancake day…simply delicious!

YOU WILL NEED : Serves 4
For the pancakes;
125g plain flour
1 medium egg
125ml skimmed milk
For the topping;
2 medium apples
(Pink Lady or similar)
2 tablespoons sugar
Juice of 1/2 a lemon
120g WeightWatchers creme fraiche
4 teaspoons lemon curd
Zest of 1 lemon
Cinnamon to sprinkle
Fresh mint leaves

Make the pancake batter by sifting the flour. Make a well and add the egg. Whisk together, gradually adding the milk until you have a smooth batter.
Make 8 small-medium pancakes in a hot pan using low fat cooking spray.
Core and dice the apples quite small, leaving the skin on. Pop into a pan with the sugar and lemon juice. Cook gently for around 10 minutes until the apples are softened and the sugar is syrupy.
Mix the lemon curd into the Weight Watchers creme fraiche with half of the lemon zest.
Serve onto warm pancakes.
(You can reheat the pile of pancakes in the microwave for 1-2 minutes).
Sprinkle the apple with cinnamon, top with the lemon curd creme fraiche and garnish with lemon zest and a few fresh mint leaves.
