SMASH & GRAB : Crumpets with Cheese, Tomato & Red Onion


This is a simple, filling and delicious snack or light meal...with vibrant colours, superb flavours and a great bite. Best of all, it only takes a couple of minutes to prepare!
Depending on the brand of crumpets you use, this is 5pp/approx.240kcal or 6pp/approx.270kcal for two crumpets including toppings.

Simply toast two crumpets and slice some tomato and red onion. Pile onto the plate with some fresh basil leaves.


Spread the crumpets generously using 2 laughing cow (Light) with Emmental triangles. These are two for 1pp or 25kcal each.


Load the cheesy crumpets generously with the salad ingredients before devouring. The cheese is creamy, tomatoes sweet, red onion mild, crisp and savoury and the basil gives a fragrant, Italian zing to wake up your tastebuds!

TIP


A little bit of Slice-of-Slim brain trickery... If you are a little short of propoints, simply use one crumpet. Cut in half horizontally before toasting both halves. This halves the propoints used on crumpets but gives you the same surface area for lashings of toppings!

Hello Janey, I think your recipes are great, have you any plans to do a recipe book?, I am sure it would sell well with weight watchers and others who want to make really nice low calorie food. Going to try the fennel,feta and pomegranate salad this week!

Hi Judith! I would absolutely LOVE to do a cookery book! I just need weightwatchers to realise it would be a good idea too! I'm networking like mad and have been for some time...but these things take time! So glad you are enjoying my recipes, thank you xx
