SMASH & GRAB : Coconut 'Cream'


I don't usually advocate the use of ingredients with a high fat content, but because this one is combined with a second 0% fat ingredient, the damage is somewhat diluted. This speedy little concoction is fantastic as a stand alone accompaniment to a meal such as a curry or some fresh fruit salad, or great as an ingredient added to recipes.
I've given it its own little slot as I'll be using it in some of my future recipes, so it's useful to be able to refer back to it.

Sometimes when I'm innovating an idea, something magical happens with the ingredients I'm using. This recipe is only made up of 2 ingredients; Total 0% Greek yoghurt and coconut cream. When they combine, they turn into a silky, smooth-textured 'cream', with no trace of sour 'yoghurtiness' on your palate.


I buy my coconut cream like this, in tiny 160ml tins as I use it in small amounts and it has a very short shelf life. Also, it's so delicious and high in propoints/calories as an ingredient, so I don't want to be tempted to use too much of it.

You Will Need : (Serves 4)

200g Total 0% fat Greek yoghurt
80ml coconut cream

Each portion works out to 2pp/68kcal

Literally weigh out and combine the two ingredients together, stirring well to ensure an even distribution and a glossy finish.

Perfect as an addition to a meal like this one, where your propoints are negligible, so the coconut 'cream' transforms it into a spectacular meal and adds a real taste of luxurious decadence. You can dollop it on as I did, with a sprig of coriander, or stir it through the curry for a creamy dish.


This is also great if you're entertaining and as a weight conscious foodie, you can decide whether to add it to your meal or not, but it turns a WeightWatcher friendly meal into a show-stopping dish for your guests.

You could pop it over some fresh pineapple for a Pina Colada-inspired dessert. You may want to sweeten it a little to your personal taste using artificial granular sweetener.

Wow i've never even heard of Coconut Cream before but i'll definitely be giving it a try now in and with curries. Always on the lookout for new ways to make creamy curries. Thank-you!
