RED NOSE DAY! : Tomato & Feta Salad


As it's Red Nose Day and there may be much watching of T.V going on this evening, I just came up with this fun little 1pp/approx.50kcal salad idea!


Take a tomato.


Pop it on a plate, stalk-side-down. Cut into two pieces, just over half way up.


Now you have a 'base' and a 'lid'.
Scoop out the seeds.


Fill the 'base' with tiny cubes of low fat feta or mozzarella cheese (25g is plenty) and some torn basil. Pile it high as the 'lid' will cover it up.


Pour over a tiny splosh of seasoned rice vinegar.


Pop the 'lid' back on.


Using extra light mayo from a squeezey container, draw a face onto the tomato.


Using a cocktail stick, add some detail to the eyes with a little balsamic vinegar or glaze.


Tuck in and enjoy a fun evening which raises millions of pounds for some incredibly worthwhile causes.

Q: Why did the tomato blush?
A: Because it saw the salad dressing.
