This seasoned rice vinegar is a wonderful ingredient to keep in your store cupboard. Just a couple of teaspoonfuls livens a salad up. Although it's vinegar, I find it less acidic than some of the standard wine vinegars. This has a gentle but distinctive flavour. I particularly like it mixed with a little artificial sweetener, as a dressing for cucumber salad- it makes a kind of sweet pickling juice-really yummy. It's available in most supermarkets. There is an unseasoned variety too, but the seasoned one is far superior.
It's also great to pop a teaspoonful into boiling water for really successful poached eggs.
